Ventagli di arista con pancetta
Questa è una delle tante ricette che ha come ingrediente principale l’arista di maiale. Quella di cui scriverò oggi è farcita con pancetta e con un profumo di rosmarino. Vi consiglio di provarla perchè è un piatto che si presenta davvero bene.
Ingredienti:
150gr. di pancetta tesa
150gr. di pancetta arrotolata
Rosmarino, sale e olio
Vino bianco
Procedimento:
Tagliate l’arista verticalmente (tipo libro) facendo attenzione a non fare un taglio troppo profondo. Farcitela con pancetta tesa e arrotolata, legate la carne con uno spago da cucina e aromatizzate il tutto con del rosmarino.
Lasciar rosolare per 10min. circa con qualche cucchiaio di olio, sfumando con del vino bianco. Lasciar cuocere per 40min. a fiamma bassa. Tagliare la carne quando si è raffreddata e riscaldarla prima di servirla.
